focaccia bread or pizza crust, your pleasure

Focaccia Dough ~ makes 2 loaves, or 2 pizza crusts

4 c. flour
2 t. salt
2 T. yeast
2 T. olive oil, sometimes a bit more
2 T. rosemary (optional)
1 3/4 c. warm water

Mix dry ingredients and oil, add water. Knead. It’s a soft dough. Let rise until doubled. Flatten into 2 rounded balls and let rest half an hour. Grease pan, using lots of olive oil, then put dough on and oil that, too. For pizza, roll out and top. Bake at 450 for about 15 minutes. The bread is delicious topped with more olive oil, caramelized onions, garlic, and herbs. Also great sprinkled with Parmesan or mozzarella cheese.
