sunday salad

This is my new favorite salad and I love to serve it with grilled or roasted garlic-lemon chicken and baked potatoes.

Sunday Salad

8 cups fresh baby arugula or combination baby leaf lettuce
1 medium red onion, finely sliced
1/2 cup toasted almond slivers
1/2 cup craisins (dried cranberries)

Vinaigrette

1/4 cup balsamic vinegar
1/2 cup olive oil
1-2 tsp. finely minced garlic
1 tsp Dijon mustard
1 tsp. kosher salt
1 tsp. sugar
freshly ground black pepper to taste

Combine all vinaigrette ingredients in a bowl, whisking until sugar and salt are dissolved and adding olive oil a little at a time. In another bowl, mix the lettuce, red onion, almonds and craisins. Just before serving, drizzle with dressing. (To toast the almonds, place in single layer on cookie sheet in 375 degree oven for about 6 -8 minutes.)

    I can’t even tell you how wonderfully delicious this salad is!

    So, here is what I do for the chicken and please remember that Garlic should be my middle name.

    Boneless, skinless chicken breasts
    Lemon juice
    Olive oil
    Minced garlic (I buy this in the large jar) 🙂
    Kosher salt
    fresh-ground black pepper

    Sometimes I bake this in the oven. Sometimes I sautee it on the stove. Sometimes I brown the chicken on the stove in the olive oil and garlic and then put it in the oven with the other ingredients. I usually use about 1 tsp of garlic and 1 Tbs lemon juice per chicken breast. It is also really good served with long grain and wild rice or broccoli rice and shredded cheddar cheese. Just cook the rice and broccoli separately and then layer and serve when the cheese melts.

    Here is another option:

    Brown the chicken with garlic and fresh mushrooms in olive oil. When brown on both sides, turn down heat and spread cream of mushroom soup over all, put on a lid, and allow to cook until tender. You will get this yummy mushroom and garlic sauce. Serve over rice.
