It is true. Ranch salad dressing is the new ketchup. So it seems like a smart idea to use ranch dressing in creating delicious dishes that are sure to please those who are young and young at heart. Here is a recipe we dreamed up one afternoon last fall and it has become a family favorite.
boneless, skinless chicken breasts, one per serving, thawed, rinsed, and patted dry
Hidden Valley Ranch Salad Dressing or any type you have on hand
unseasoned bread crumbs
In baking dish, place 2 tablespoons of ranch dressing for each chicken breast. Roll breast in dressing to coat and sprinkle well with bread crumbs. Bake in 350 degree over for 45 to 60 minutes, depending on size of breasts. Meat will be moist, tender, and delicious.
Here is a great side dish that can bake in the oven along with the chicken. Add a fruit cup or salad and rolls or bread to complete the meal.
Camp Potatoes in the Oven
For each serving, scrub and slice one medium sized potato, one large carrot, cutting each once long ways and once across. Place in center of a sheet of foil and drizzle with olive oil. Sprinkle with 1 tsp. minced onion, 1 tsp. minced garlic. 1/2 tsp. dried parsley flakes, coarse salt and fresh ground pepper to taste. Wrap each serving separately and place foil bundles on a cookie sheet. Bake for 45 minutes to 1 hour in 350 degree oven. Open carefully as the steam will be quite hot.
