Each one of my sons has discovered the joy of cooking during their later teen years when they are hungry ALL the time! Last week while Joe was waiting to see the dentist, he watched some cooking show that was on the television in the waiting room and came home wanting to try this recipe. Since we had no list of ingredients or amounts to list, I am sharing Joe’s version as he remembered it! I think the secret is in cooking the potatoes with the garlic in the water.
Joe’s Garlic Potatoes
3-4 lbs. red potatoes, skins on
water to cover in pan with 1 TBS. coarse salt and 3 TBS. minced garlic added to water
Boil until potatoes are soft. Drain, reserving a half cup of water in the potatoes. Gently mash, do not whip. Add 1 stick of butter and small amount of milk if necessary. Salt and pepper to taste. Sprinkle with parmesan cheese and serve. These are absolutely delicious!
