Every once in a while you come across the perfect cookie, the State-Fair-Grand-Prize-Winner cookie, the let’s-make-five-more-dozen cookie. This is that cookie.
Last week my friend, Talia, shared this recipe on her blog so I decided to try it today since I am getting a box of goodies ready to send to Ben. I doubled Talia’s recipe and tweaked it a little to make this batch and they are wonderful. Enjoy! Makes 5-6 dozen cookies.
1 cup butter (no substitutes), softened
1 1/2 cup sugar
1 1/3 cup packed brown sugar
2 1/2 cups peanut butter
1 TBS. vanilla extract
2 cup all-purpose flour
1 tsp baking soda
1/2 tsp salt
10 Butterfinger candy bars (2.1 oz each), coarsely chopped
In a mixing bowl, cream butter and sugars. Add eggs. beat well. Blend in peanut butter and vanilla. Combine flour, baking soda, and salt; add to creamed mixture and mix well. Stir in candy bars. Shape into 1 1/2 inch balls; place on greased baking sheets. Bake at 350 for 10-12 minutes or until golden brown. Cool on wire racks. (I baked mine for 6 1/2 minutes and then switched them on their racks in the oven.) These would make awesome ice cream sandwiches with butter pecan ice cream!
