It is cold and drizzly here today; I wish all this rain could be snow instead! There are already Christmas carols playing in my kitchen and I put up one small tree in the dining room. I am anxious for Christmas, I really am.
I have been trying to make extra delicious suppers this past week to make up for the unmentionable frozen pizzas and carry-out everyone endured during that last week before the mom’s retreat! No one complained but I saw it in their eyes!
Tonight, along with stuffed pork chops, we are having a version of scalloped potatoes that I discovered in one of my Christmas cookbooks that I pulled off the shelf during my quest for cookie recipes! In case anyone is worried that I missed Thanksgiving, have no fear! We have been celebrating it for the past month with the big feast coming when our friend, Doc, arrives.
Cheery Cheesy Potatoes
10 potatoes, sliced and parboiled
8 oz. Velveeta cheese, cubed
1 diced green pepper
1 finely sliced onion
1 jar pimentos, drained
1 stick butter, melted
½ c. milk
1 TBS. parsley flakes
Salt and freshly ground black pepper to taste
Drain potatoes and arranged in casserole dish. Top with the green pepper, onion slices, pimentos, and cubed cheese. Mix butter and milk and pour over all. Sprinkle with parsley and bake at 350 degrees for 45 minutes.
