Here are a few recipes for dishes to prepare using what is on your pantry shelf and in the fridge. They are so easy I say turn your kids loose on these and have a glass of tea and read a good book while they fix supper! I guarantee the family will love this meal! Add fresh fruit and a leafy salad or veggie tray for good measure!
Mexican Fiesta Soup
Note: This recipe is for the standard 15 ounce or so sized cans and makes 8 super supper servings.
2 cans chicken broth
2 cans black beans
2 cans refried beans
2 cans diced tomatoes and chilies or Rotel
2 cans corn (can use 1 lb. frozen corn or 2 cups fresh)
1 large onion, chopped
2 Tbs. minced garlic
2 Tbs. olive oil
2-4 cups leftover cooked chicken (optional, it is delicious either way)
In stock pot, sauté onion and garlic until tender. Add rest of ingredients and simmer for 30 or so minutes or place in crock pot on low for a couple hours. Serve topped with your favorite Mexican toppings….sour cream, salsa, cheese, Fritos, tortilla strips, black olives, etc.
Pantry Corn Bread
This is so simple it is scary!
2 packages of Jiffy corn bread mix
1 package yellow cake mix
Make each according to package instructions and blend batters. Pour into greased 13 X 9 pan. Bake at 350 degrees for 35 minutes or until light golden in color and fork comes out clean.
Heavenly Gooey Chocolately Deliciousness
You’ll thank me later.
1 German chocolate cake mix, baked in 13 X 9 pan and allowed to cool for 15 minutes.
Poke all over with chop stick and pour over the top 1 small can sweetened condensed milk. Allow to soak into cake for 10 minutes. Over the top spread 1 jar caramel ice cream topping. Over that, spread Cool-Whip. Chill for a couple hours. Before serving, sprinkle with Heath Bar chips.
